Coffee from the pot

Remember Turkish coffee? It wasn't about the additions to the beverage, but a method of brewing. The same situation is with our next star of the week, namely café de olla.

This type of brewing a coffee comes from Mexico and it is drunk in all of Mexico, especially in rural areas and with a cooler climate, every day and during holidays. 
Its name literally means 'a coffee from the pot'. Traditionally, this beverage is made in hand-made clay pots with a thick bottom (ollas de barra) which give the name to that type of brewing. 

The process of brewing is not complicated, but I assume that in Europe it would be quite difficult to obtain a suitable pot and one of the ingredients - piloncillo. It's not something extraordinary, because it is a type of unrefined cane sugar, usually in pieces. When it comes to the preparation, you only need to boil cinnamon in sticks with the piloncillo in a pot with water, stirring until the piloncillo dissolves, then add coarsely ground coffee beans and boil the totality one more time undercover, occasionally stirring. Afterward, you have to strain the beverage which is served in smaller earthenware pots, sometimes with biscuits.
